Maple butter porridge

Serves 1
Preparation time: 10 minutes



There are very few days in a year when I don't have porridge for breakfast, so you'll be getting maaaany different porridge recipes on this blog. I am having maple butter porridge this morning,  it's inspired by my Canadian man who tells me that 'Maple syrup goes with EVERYTHING!' He is adamant about this, and he may have a point if you think about it ... (ex: baked beans + myrup = win). When it comes to porridge he is definitely right - but here I am using maple butter, which is creamy and delicious and a good alternative to refined sugars. 

Ingredients

1/2 cup of porridge oats
1/4 cup of muesli (I used Organic Alara Gluten free Goji berries & Cranberries Muesli)
3/4 cup water
1 generous tsp maple butter
1 chopped up pitted date
a sprinkling of seeds - linseeds/pumpkin seeds are good
a sprinkling of almond slivers - crumble them in with your fingers
1 Tbs of plain soy yogurt
1 tsp non-sweetened peanut butter

Directions

Put the oats, muesli, water, maple butter and date in a small cooking pot and cook on medium heat, stirring often so it doesn't stick (add some water if it does). After a few minutes add the seeds and almonds. When the porridge is cooked place in a bowl and add the yogurt and peanut butter. Yum, guaranteed this will give you energy until lunch time!
