Almost Apple Pie Porridge

Serves 2
Preparation time: 15 minutes 



Ever want to have dessert for breakfast? Well of course you do! Unless you are one of my extremist French friends who only have cigarettes and black coffee for breakfast. Well here is how to magically turn your morning porridge into almost-apple pie.

Ingredients
1/2 cup regular oats
1 cup almond milk (or any non-dairy milk)
1 T flaxseed (I use Linwood's flaxseed, cocoa & berries mix)
1 apple peeled and cut into 1 inch pieces
1/4 cup unsweetened applesauce
1 T of peanut butter
2 tsps brown sugar
1 tsp cinnamon
1/2 T & 1 tsp of lemon juice 
a pinch of salt
2 pitted dates, chopped
a handful of slivered almonds


Directions 
Place the chopped apple in a bowl, add 1/2 T of the lemon juice, 1 tsp of the brown sugar and a pinch of salt. Leave one side for a few minutes to draw out the juices and soften the apple.
Meanwhile in a small pot mix all the other ingredients except for the remaining lemon juice, brown sugar and the almonds. 

Add the apples to the pot and heat over medium heat for about 10 minutes, stirring frequently. The porridge will thicken as the liquid is absorbed. Remove from the heat, mix in the remaining teaspoon of lemon juice and brown sugar, place in bowls and top with crumbled almond slivers.

If you want it to be less thick you can add some non-dairy milk to your almost apple pie porridge!
