Sticky Caramel Banana Bread Pudding


Serves 10
Preparation time: 40 minutes


The caramel filling turns this banana bread into a sticky sweet pudding. Perfect served with a steaming mug of tea on a rainy afternoon, a good book and perhaps a scoop of vanilla dairy-free ice cream.


Ingredients

For the batter
1 3/4 cup wholemeal flour (or GF)
 1/2 tsp xanthum gum
1/2 cup oatmeal
1/2 T cinnamon
1 cup & 1 tsp brown sugar
1 tsp baking powder
½ tsp baking soda
1/4 tsp salt
½ cup canola oil
1 t vanilla extract
1 1/2 cups sliced and mashed banana
1 tsp lemon juice
1 cup dairy-free milk + tsp apple cider vinegar
1/4 cup chopped pecans


For the salted caramel
2/3 cup brown sugar
1/4 cup dairy free milk
1/4 cup vegan margarine
1 1/2 tbsp cornflour
1 tbsp water
1 tsp vanilla
1 pinch sea salt

For the topping
1/2 cup chopped pecans
2 T vegan margarine
1 T brown sugar
1 tsp cinnamon
2 T flour


Directions


Preheat oven to 350F/180C. Lightly grease a 12inch baking tin. 

In a small bowl mix together the dairy-free milk and vinegar and set aside for about 5 minutesSlice and mash the banana with 1 tsp brown sugar and 1 tsp lemon juice. 

In a large bowl, whisk together the dry ingredients and make a well in the center. Add the oil and vanilla extract to the milk and vinegar, mix. Pour into the well with the dry ingredients. Mix together until the batter is just moistened. Fold in the banana and 1/4 cup pecans.

In a separate small bowl mix together the topping ingredients with your fingers until combined.

In a small pot over medium heat combine the caramel ingredients and whisk well. Let it simmer until the mixture thickens a little. Leave to one side to cool slightly. 

Scoop out half of the batter into the baking tin and spread out evenly to cover the whole surface. Pour the caramel over the batter. Now cover with the remaining half of the batter. Spread out the pecan topping on top. Bake for about 25 minutes or until a toothpick inserted in the center of a muffin comes out clean and welcome to sticky caramel banana bread pudding heaven!
